Pastrami Reuben Egg Rolls (Air Fryer or Oven Recipe)

Reuben Egg Rolls

A traditional Reuben usually consists of corned beef, Swiss cheese, and sauerkraut served on rye bread with Russian dressing. It’s the ultimate deli sandwich. This fun variation, also known as the “Irish” egg roll, incorporates the classic sandwich filling into an egg roll wrapper. My Rueben-Stuffed Pork Tenderloin is another creative take on a Reuben.

Reuben Egg Roll Ingredients:

Meat: I opted for sliced, cooked pastrami, which I found at my local Trader Joe’s, but I’m sure you can find it at most delis. You can use corned beef if you prefer.
Toppings: Just like the sandwich, these egg rolls have lots of sauerkraut and melted Swiss cheese. I think some chopped pickles would also be tasty if you want to add some.
Dressing: Instead of putting the Russian dressing inside the egg rolls, which would make them soggy, I use it as a dipping sauce.

How do you make Russian dressing from scratch?

Russian dressing is very easy to make from scratch. Just mix these ingredients together:

  • Light mayonnaise
  • Ketchup
  • Worcestershire sauce
  • Horseradish
  • Hot sauce
  • Lemon juice
  • Onion powder
  • Salt

Russian dressing often gets compared to Thousand Island dressing. While similar, Russian dressing is spicier and less sweet than Thousand Island.

Freezer Tips:

  • If you don’t want to cook all the egg rolls at once, you can freeze them in freezer- safe bags for up to six months. Make sure to squeeze out as much air as possible when sealing the bags.
  • To cook from frozen, cook in an air fryer preheated to 320 degrees for 12 to 14 minutes, turning halfway through until golden brown and crisp. Serve immediately with dipping sauce on the side if desired.

Golden, crisp Pastrami Reuben Egg Rolls with Russian Dressing, made healthier by cooking in the air fryer or baking in the oven, taste so good!

For egg rolls:

  • 1 1/2 cups sauerkraut
  • 8 egg roll wrappers
  • 6 ounces pastrami, chopped (or corned beef)
  • 1 cup shredded reduced fat Swiss cheese, I like Jarlsberg
  • small bowl water, for sealing
  • Olive oil spray

For Russian dressing:

  • 1/4 light mayonnaise
  • 2 tablespoons ketchup
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon horseradish
  • Dash of hot sauce, I used Frank’s Red Hot
  • 1/2 tablespoon fresh lemon juice
  • 1/4 teaspoon onion powder
  • Pinch kosher salt
  • With a clean kitchen towel, squeeze excess liquid from sauerkraut.  Set aside.

  • Place 1 egg roll wrapper on a clean, dry work surface with corners positioned like a diamond.

  • Add ¾ ounce (2 tablespoons) pastrami, 2 tablespoons cheese and 2 tablespoons sauerkraut on the bottom third of the wrapper.

  • Carefully lift the bottom point nearest to you and wrap it around the filling. 

  • Dip your finger into a small bowl of water and run it along the edges of the wrapper. 

  • Fold the left and right corners in toward the center and continue to roll into a tight cylinder.

  • Repeat with remaining filling and wrappers.

Air Fryer Egg Roll Method

  • Preheat air fryer to 370 degrees F.

  • Spray all sides of the egg rolls with oil and rub with your hands to evenly coat.

  • Cook egg rolls in batches for 10 minutes, turning halfway or until golden brown and crisp.

  • Meanwhile, combine dressing ingredients in a small bowl.

  • Serve immediately with dressing on the side or drizzled on top.

Egg Roll Oven Recipe:

  • Bake 400F in a preheated oven 12 to 16 minutes, flipping halfway.

  • From frozen, 375F 18 to 20 minutes, flipping halfway.
